I’m always looking for delicious recipes that aren’t loaded with carbs, and this one hits the spot!
What you need:
2 eggplants slice in rounds or lengthwise
1 pound lean ground beef or turkey
16 oz Roasted Tomato Sauce or fave low sugar marinara
1 tsp Italian seasoning (no salt)
1 cup shredded mozzarella
1 cup shredded cheddar
1/4 cup grated Parmesan cheese
1/4 almond flour
Preheat oven to 400 degrees. Place sliced eggplant in colander and lightly salt to absorb moisture. Let sit for 10-15 minutes and pat with paper towel. Spray two sheet pans with olive oil spray and roast eggplant for 15-20 minutes.
Brown hamburger meat, drain, add the tomato sauce and 1/2 teaspoon of the Italian seasoning. Cover and simmer 15 minutes.
In an 8″ x 8″ glass dish (or pie plate) layer the eggplant, 1/2 the sauce and 1/2 of each of the cheeses. Repeat and top with blended almond flour, Parmesan, and remaining 1/2 tsp of Italian seasoning.
Cover with foil and bake for 20-25 minutes at 400 degrees. This was a hit with everyone!
