Who knew making your own roasted tomato sauce would be so easy? This recipe is great for pasta, pizza, sandwiches and more!
I live in the small community in Sumner County, TN of Portland, home of a portion of The Hill Family Farm. They have locations here and in White House, a neighboring city. While shopping their booth last week at the Portland Farmer’s Market, I picked up a handy kit they put together with all the ingredients necessary to make roasted tomato sauce along with the recipe.
What you need:
2 pounds of tomatoes
1 chopped bell pepper
1 chopped onion
1 clove garlic, peeled and halved (We love garlic, so I used 4 cloves.)
2 tbls olive oil
Salt and Pepper to taste
Fresh basil for edible garnish
Preheat oven to 425 degrees. Slice the tops of the tomatoes off and cut in large chunks.
Chop the pepper, onion, and garlic.
Mix those 4 ingredients and toss with the olive oil and salt and pepper.
Place all ingredients on roasting pan and roast 40-60 minutes, stirring half-way.
Remove from oven when the corners of the tomatoes are starting to blacken and the juices have released.
Let cool, blend, enjoy topped with the fresh basil! Not
