Um, homemade veggie soup in less than 30 minutes with the Instant Pot? Yes, please! Don’t have an IP, no worries. In just a couple of hours, you can have it on the stove top, too.
What you need:
1 tbls olive oil
1 chopped onion
2 cloves chopped garlic
1 pound of lean ground beef
2 cups no salt broth
1 can no salt added diced tomatoes
1 can tomato paste
1 cup each of your favorite veggies (I used corn, peas, green beans, limas, and okra)
Heat the oil and sauté the garlic and onion. Add in the beef and brown.
Add in the can of tomato paste and simmer for a couple of minutes.
In an Instant Pot or large soup pan, combine the veggies, tomatoes, broth, (get my Bone Broth recipe), salt and pepper to taste. Mix in the beef. Pressure cook on high for 5 minutes in the Instant Pot or simmer for 1-2 hours on the stove top. You may need to add a little water or extra broth to reach your desired consistency. That’s all, folks!
