I prepared Taco Soup in less than 30 minutes in the Instant Pot or you can slow cook it for 4-6 hours. Either way, it’s a delicious, healthy one-pot meal.
What you need:
1 pound chicken breasts
1 cup organic broth
1 can low sodium black beans
1.5 cups frozen corn
1 can no salt added Rotel
2 tbls no salt taco seasoning (get my recipe here)
Salt to taste
Place all ingredients in Instant Pot or slow cooker.
Pressure cook for 12 minutes and let release naturally, or slow cook for 4 hours on high or 6 hours on low. When done, pull chicken and salt to taste.
Serve over tortilla chips and top with your favorite toppings.
