This bite-sized snack is guilt free and kicks cravings right in the you know what. Peanut butter and chocolate is my favorite dessert combo and these candied treats hit the spot.
What you need:
1 Cup natural peanut butter
2 tbls maple syrup
1 tbls corn starch
3/4 cup coconut flour
8 oz dark bakers chocolate (60% cacao or more)
2 tsp coconut oil
Mix pb, coconut flour, maple syrup, and corn starch.
Roll into 24 balls and place on parchment paper lined pan. Spray hands with cooking spray to keep from sticking to your fingers. Place a toothpick in each and put in the fridge for 20 minutes.
While those are setting up, melt the chocolate and coconut oil in a double boiler or in the microwave.
Once melted, dip the peanut butter balls in the chocolate and place back in the fridge for at least an hour.
Remove from the paper and place in an air tight container in the fridge. Enjoy!
