It doesn’t get much easier than this.
What you need:
4 tablespoons red wine vinegar or apple cider vinegar
4 teaspoons balsamic vinegar
Juice of 1/2 lemon
4 teaspoons extra virgin olive oil
2 cup halved, cherry tomatoes
2 halved, length-wised cucumber, sliced
4 tablespoons red onion, chopped
4 tablespoons fresh basil leaves, chopped
4 tablespoons fresh parsley or cilantro, chopped
Sea salt to taste
Mix all ingredients and enjoy!
