Moroccan Carrot Salad

This salad makes a wonderful salad topping or can be eaten as a side. I love the spice. It would be good if you add raisins, too! It’s different. I’m always looking for something different!

What you need:

2 Cups chopped or grated carrots

1 tsp olive oil

Juice of 1 lemon

2 tsp chopped garlic (or less to taste) I love garlic!

2 tbls fresh cilantro (1 tbls dry)

1/4 tsp cumin

1/4 tsp cinnamon

1/4 tsp paprika

Dash cayenne to taste (optional)

Dash sea salt to taste

Mix all ingredients together. You can let chill overnight in the refrigerator or eat immediately. This actually works better with grated carrots but I didn’t feel like grating them when I whipped this up. You can buy grated!

That’s all there is to it! I served over spinach with a little sesame oil and it was delicious.
