Elderberry Syrup and Gummies

Whether you want an immune system boost or you are treating cold and flu symptoms, this elderberry syrup is a must have in every household. The syrup is easy to drink or lure your picky eaters with gummies.

What you need:

1 cup dried elderberries (I buy on Amazon: https://amzn.to/2EaWdfb.)

2 cinnamon sticks (https://amzn.to/2EdaojV)

3 whole cloves (https://amzn.to/2Qi1WqG)

1 inch of fresh ginger, peeled and quartered

4 cups water

1/2 lemon

1 cup honey

For gummies:

Gummy bear molds

1/4 cup plain gelatin

1/2 cup hot water

Coconut oil for greasing molds

In a saucepan, combine water, elderberries, cinnamon sticks, cloves,and ginger. Bring to a boil. Reduce heat, cover, and simmer for one hour. Or, simply cook on high pressure for 7 minutes in the Instant Pot.

Strain mixture into a large bowl with a fine strainer. Press berries to get all the juice out.

Remove the strainer, let cool to room temp, and whisk in one cup of honey.

Transfer to a glass container and store in the refrigerator. It will keep for over 2 weeks. If you are making gummies, set aside one cup of syrup and let cool.

For the gummies, place 1/2 cup of cooled elderberry syrup in a glass bowl. Whisk in the 1/4 cup of gelatin. Add in 1/2 cup hot water, not boiling. Mix and then add in remaining 1/2 cup of syrup. Place in coconut oil greased gummy bear molds and refrigerate for at least 2 hours.
