Oh me, oh my!! These pork chops cooked in a cast iron skillet on the stove top and in the oven are absolutely perfect.
What you need:
1 pound of pork chops
1 tbls olive oil
1 tbls Montreal seasoning
Preheat cast iron skillet in 400 degree oven.
Coat chops in olive oil and Montreal seasoning.
Remove heated skillet (with an oven mitt!!!) from the oven and place on the stove top over medium heat. Place the pork chops in the skillet and sear for 3 minutes on one side.
Flip the pork chops, place in the oven, and bake until 140 degrees. It usually takes 6-10 minutes depending on the thickness of the meat. I start checking the temp at 6 min.
Remove from oven and let rest for 5 minutes. At resting, I added a small pad of grass fed butter, and y’all, these were the best pork chops I ever made!! I served with a backed sweet potato and roasted Brussel sprouts with apples. Check out that recipe here: Roasted Brussel Sprouts w/ Apples.
